Sopa de Conchas (Mexican Shell Soup)
Ingredients (Smaller Serving- about 7.5 Cups):
Ground Beef (1/2 lb)
Conchitas (shell pasta)
1/2 White Onion
3 Romo Tomatoes
4 Cloves of Garlic
4 Potatoes
Chicken Stock
Cilantro (chopped up for garnish)
2 Limes (cut up for garnish)
Optional: Corn tortillas with butter to dip into soup
Instructions:
Use your largest pot to brown, and drain your ground beef.
Add chopped pepper, let cook for a few minutes
Cook rice in rice cooker
Add tomato sauce, add diced tomatoes, add bouillon cubes, brown sugar, salt, pepper, soy sauce
Incorporate ingredients and simmer for about 30 minutes
Add rice directly to the soup or store separately
Serve and enjoy!

Ground Beef (1.5 lb)
4 bell peppers
29 oz tomato sauce
29 oz diced tomatoes
1/4 cup of packed brown sugar
2 teaspoons of salt
black pepper to taste
2 teaspoons of soy sauce
2 cups of white rice
